Fresh medicinal plant raw material has not found a wide utility because of impossible long-term storage and a need for its rapid processing immediately after collection. Preservation, including a traditional technique, such as desiccation, is used to retain the pharmacological properties of plant raw material and to ensure its quality during storage. However, freezing that ensures complete or partial conversion of cell juice to ice may serve as an effective method to preserve medicinal plant raw material. Freezing is extensively used in food industry, but rarely employed in pharmaceutical practice. The morphological and anatomic signs of dried and frozen redhaw hawthorn (Crataegus sanguinea Pall) and rowan (Sorbus aucuparia L.) fruits were comparatively examined. Low temperatures were established to have an impact on the signs of the appearance and anatomy of the fruits. The diagnostically important morphological and anatomic signs of frozen medicinal plant raw material were identified.
